In a large mixing bowl, combine the ground chicken, chopped red bell pepper, chopped cauliflower, chopped broccoli, breadcrumbs, Parmesan cheese, garlic powder, onion powder, paprika, salt, and black pepper. Mix well until all ingredients are evenly distributed.
Add the beaten eggs to the mixture and mix well to combine.
Form the mixture into nugget shapes, about 1 inch in diameter.
Place the flour in a shallow dish. Roll each nugget in the flour to coat.
Preheat the air fryer to 375°F for 5 minutes.
Spray the air fryer basket with cooking oil spray.
Place the coated nuggets in a single layer in the air fryer basket, making sure they are not touching each other.
Spray the tops of the nuggets with cooking oil spray.
Cook the nuggets in the air fryer for 10-12 minutes, flipping them halfway through, or until golden brown and cooked through. (Internal temp of 165°F)
Serve the chicken nuggets hot with your favorite dipping sauce.
